Thanks to my daughter.

My soon to be famous organic blueberry pie. My 3 year old daughter came up with the brilliant idea of baking a blueberry pie. Thank you sweet girl. Yum! ate half the pie since yesterday... Times like this, I thank my lucky stars for my high metabolism.

I love my daughter with all my heart. For me that means making sure she grows up healthy and smart. 
As a single mother, how do I do that? What comes to mind is making enough time to ensure this happens. 
I read to her each night, books in Spanish and French. Usually 5 short books. I highly recommend using your public library. I try to incorporate learning activies 3 times a week. Doesn't seem like much, but with work and school, boy 3 times is plenty right now. You can find ideas on youtube. Just search "learning activities 3 years old." 
But it doesn't just stop with learning. Maybe over the next few days I'll post a blog for each aspect of raising a child from my perspective. Any advice is welcomed also. Thanks!

Living your whole life without making blueberry pie?

Ever experienced love at first sight?? I believe I have... I was in Costa Rica this past summer, at a club, and someone tapped me on the shoulder to ask me to dance. Our eyes met and my heart was set. Luckily, it was the same for him too. We've been talking every day since I returned to the United States. I feel like I must be the luckiest person in the world to have experienced this. BUT I'm trapped here in the states, otherwise I would have picked up and moved to Costa Rica, teaching English or something. You see, I have a little girl, my 3 year old daughter, whom I would love to take with me, of course, but her father is planted firmly in Houston. I ended with him 2 years ago, for reasons that I will leave unsaid so he can save face. 
Anyway, my heart aches to be with the one I love. Not a minute passes that I don't think about him. I have accepted that I can't be with him and hope to travel to see him when I can, but GOD, how I miss him.. 

Another love of mine is cooking. I'm not a professional chef by ANY means, mind you. But, you know that feeling you get when you're about to prepare something you've never made before. Every ingredient is added to the recipe with care with a little of your own tweaking. I decided to make blueberry pie with a lattice top all , homemade from pie crust to pie filling! Can't wait to see the results...
